Hi, I’m Shannon, and I couldn’t be more thrilled to introduce myself and share my story with you! My story of experiencing the healing benefits of fermented foods came from my diagnosis with Celiac disease in 2010. I learned about the benefits of consuming a diet rich in fermented food from reading The Art of Fermentation and started experimenting in the kitchen shortly after that. My love for kombucha, coupled with my passion for cultivating community, spreading knowledge and supporting local organic food systems led me to open Booch Organic Kombucha—a company that mirrored my own personal values and allowed me to practice my creativity through the art of kombucha fermentation. Booch is a heart-centered business; operating with eco-regenerative business practises, synergy, connection, gratitude, compassion, purpose and love. I started fermenting jun after a trip to Guatemala in 2016 where I took part of week-long fermentation course through Love Probiotics. After a week, I was inspired to start fermenting other foods and beverages including jun, beet kvass, steel cut oats, kefir and fruit vinegars. Before I flew back to Canada, they gifted me a jun SCOBY: a symbiotic culture of bacteria and yeast that is unique to jun; using organic Sencha Green Tea and Local Raw Honey. Since 2016 I have nurtured this SCOBY, slowly getting it accustomed to local Ontario honey. I knew I wanted to expand the Booch brand beyond kombucha and Jun was the perfect fit! I’M SO PLEASED TO INTRODUCE TO YOU MOONBREW BY BOOCH. Offering you a healing beverage that is brewed with love and care, using only the best quality organic and wild-crafted ingredients.
