We love Rhubarb. Rhubarb is objectively great and we naturally wanted to turn it into an all natural soda. So we travelled east in search of a companion, or indeed really really west, finding one in Thai Basil (more of a metaphorical journey to be honest, we never really left Edinburgh, we did however go to Waitrose more than a few times).
Our Rhubarb and Thai Basil Soda was the very first recipe we developed and is one that we are really proud of. It’s a beacon of natural soda simplicity, containing just Rhubarb, Thai Basil, Water and Sugar.
CUCUMBER & FENNEL SEED SODA
A 1998 study in Chicago found that out of a range of scents, women found the combination of cucumber and anise the most arousing, a study we 100% promise was not the inspiration for this soda. Instead, we sought to create a light and refreshing soda filled with wonderful things. We couldn’t look too much further than Cucumber, adding Fennel Seeds to bring depth.
But, like the late nineties rave scene, sodas need acid, and traditional sources of acidity, your lemons and limes of this world, overpowered the delicate cucumber flavour. So we looked to the world of cocktails for inspiration (a real tough phase in our recipe development) finding what we needed in the world of shrubs. This soda contains Cucumber, Fennel Seed, White Wine Vinegar, Water and Sugar.
